Recipe: Chicken and Veggie Fajitas


Chicken and Veggie Fajitas
This delicious restaurant favorite is easy to make at home! Our version is healthy and packed with a rainbow of vegetables. 

Total Time: 53 min.
Prep Time: 15 min.
Cooking Time: 7 min.
Yield: 4 servings, 2 fajitas each


Ingredients:

  • 1 tsp. chili powder
  • 1 dash sea salt
  • 1/2 tsp. ground cumin
  • 1/2 tsp. garlic powder
  • 2 tsp. olive oil, divided use
  • 4 (4-oz) raw chicken breasts, boneless, skinless, cut into 1/2-inch strips
  • 1/2 medium green bell pepper, cut into thin strips
  • 1/2 medium red bell pepper, cut into thin strips
  • 1/2 medium yellow bell pepper, cut into thin strips
  • 1/2 medium red onion, thinly sliced
  • 1 yellow (or orange) carrot, sliced thin
  • 1 Tbsp. fresh lime juice
  • 8 (6-inch) whole wheat (or corn) tortillas, warm
  • 1/2 cup fresh tomato salsa (pico de gallo)
  • Lime wedges (for garnish; optional)

Preparation:

  1. Combine chili powder, salt, cumin, garlic powder, and 1 tsp. oil in large resealable plastic bag.
  2. Add chicken; mix gently to coat. Refrigerate for 30 minutes.
  3. Heat remaining 1 tsp. oil in large nonstick skillet over medium-high heat. Empty contents of bag into skillet; cook, stirring frequently, for 2 to 3 minutes.
  4. Add bell peppers, onion, and carrot; cook, stirring frequently, for 3 to 4 minutes, or until chicken is cooked through and vegetables are tender-crisp. Remove from heat.
  5. Add lime juice; mix well.
  6. Top each tortilla evenly with chicken mixture and salsa; garnish with lime wedges if desired.

I post a ton of pics on my meals and my meal prep.  Why?  Well...I want people to know the work we do at my house to keep out diet and meals in check and healthy.  I also want to inspire and educate others that it is not hard to eat healthy.  In fact, once you get your habits in place, it actually simplifies your life.  I know that because of my focus on my diet, and the time that we put into planning our meals, we feel that we have more energy, we spend less money and we never under eat or over eat. (Unless of course...its Sunday and we have both agreed to kick back and enjoy some splurging...ha ha...we are not perfect and we don't expect anyone to be.  We are just real people trying to extend our lives...not kill ourselves by only eating bird food everyday!!!)

Here is a picture of my meal prep this morning.  All this is accomplished using a very cool system from the 21 Day Fix.  See the Yellow, Red, Orange, Purple, Blue containers.  These containers allow me to know what foods I need to be eating and how much to eat.  I set the times I eat and the rest is history.  Fat melts, energy levels are high and I feel great!!!  Never knew eating healthy would be this easy.

Stop overcomplicating your diet

If poor diet is the biggest problem you have, then perhaps you need to simplify things.  STOP worrying about whether you should boil or steam or bake or grill it per the amount of nutrients you are losing that way. STOP debating whether you should buy from (insert national chain) or (insert health food store) based on the number of sweat shops used and/or pesticides added.  And STOP worrying about the taste or the non-glamorous presentation of the food and IF your body can adjust to such "extreme dieting" as no salt or JUST a chicken breast and a veggie.

Forget the small details.

Focus on the big picture.

Focus on the end result.

Bottom line...you need to keep your metabolism going, prevent your body from going into starvation mode and you need to burn more calories than you are taking in.  Allow this to become a habit...allow it to become a lifestyle...but keep it simple for now.  Steel cut oats, plain chicken breasts, broccoli and brussels sprouts (as an example) can be boring, but they are easy to make, simple to consume and get the job done.  Once the weight starts melting off & it has become a habit, you can adjust to prevent insanity.  Until then, stay focused on the goal at hand.

Just Forrest Gump it!  Don't question so much...just do it!!

Week 4 Day 1 - P90x/Insanity Hybrid - Chest & Back & Ab Ripper X

Week 4 begins today.  Last week was a little tough.  My left knee started messing with me towards the end and my meal plan caused me to have very little energy.  I adjusted my caloric intake and felt much better over the past few days.  Ready to hit the garage hard today.  I need to build some muscle!!!  Video to come...

Current Meal Plan (Not Diet)

So I started the 3 day quick fix meal plan (not diet...I plan on eating) on Monday.  I have used this before to drop some weight before going into a more mild meal plan.  I am guided by The 21 Day Fix Meal Plan (Click HERE to see what the heck I am talking about)  It is pretty awesome once you get into it.  The hardest part is the food prep...and I guess the first 2-3 days.

I am eating 6 meals a day.  My schedule is

8am - Steel Cut Oats & 4 Egg Whites
11am - Chicken breast & Half a cup of Sweet Potatoes
2pm - Chicken Breast & 2 Cups Brussel Sprouts
5pm - 2 Chicken Breasts & 1 Cup Brussel Sprouts
8pm - 1 Chicken Breast or 3 Tilapia Filets & 2 cups Brussel Sprouts
11pm - 1/2 Cup of Cottage Cheese

It has been a pretty good schedule.  I will do this for 3 days and then on my 4th day I will do my regular 21 Day fix meal plan based on the instructions from the program.  It takes a lot of prep and sacrifice...and you have to like chicken, but I like my results.
