Slow Cooker Spicy Chicken Soup







Serves: 4-6 servings
Ingredients
  • ¾ pound boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 (14.5oz) can petite diced tomatoes with lime juice and cilantro
  • 1 cup frozen sweet white corn kernels
  • 1 (4oz) can fire-roasted diced green chiles
  • 1½ to 2 tablespoon
  • Fresh cilantro and avocado for garnish, optional
Instructions
  1. Add all ingredients except for garnishes to slow cooker
  2. Cover and cook on low for 6-8 hours or high for 3-4
  3. Use forks to shred chicken
  4. Serve topped with cilantro or avocado if desired
