Chicken Breast with Sautéed Mushrooms



 WHATS FOR DINNER??





Mushroom lovers, this is for you! These mushrooms sautéed with garlic and sherry vinegar are incredibly flavorful, you’ll want to put them on everything. (Leftovers taste great in an omelette!)

Total Time: 48 min.
Prep Time: 10 min.
Cooking Time: 38 min.
Yield: 4 servings

Ingredients:
1½ tsp. olive oil, divided use
4 (4-oz.) raw chicken breasts, boneless, skinless
4 medium shallots, chopped
4 cloves garlic, chopped
1 lb. sliced mushrooms
1 Tbsp. chopped fresh rosemary (or 2 Tbsp. dried rosemary)
2 Tbsp. dry sherry (optional)
½ cup  low-sodium organic chicken broth
Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)

Preparation:
1. Heat 1 tsp. oil in medium skillet over medium-high heat.
2. Add chicken; cook for 3 minutes on each side. Remove from pan. Keep warm.
3. Heat remaining ½ tsp. oil over medium-high heat.
4. Add shallots; cook, stirring frequently, for 3 to 4 minutes, on until translucent.
5. Add garlic; cook, stirring frequently, for 1 minute.
6. Add mushrooms and rosemary; cook, stirring occasionally, for 10 minutes, or until mushrooms release all their liquid.
7. Add sherry (if desired) and broth. Season with salt and pepper, if desired; cook, stirring occasionally, for 10 minutes.
8. Add chicken; cook for 5 minutes, or until chicken is no longer pink in the middle.
9. Place a chicken breast on each of four serving plates. Top with mushroom mixture.

5-Ingredient Easy White Chicken Chili

This chili has been a HUGE hit in our challenge groups.

All you need are few simple ingredients to create this delicious 5-Ingredient Easy White Chicken Chili recipe. You can make it quickly on the stove, or let it simmer all day in your slow cooker.

I used the slow cooker for mine. However, a few of our challengers made it the on stove top as well. DELICIOUS AND EASY BOTH WAYS.






5-Ingredient Easy White Chicken Chili


This delicious and easy white chicken chili recipe can be made with just 5 ingredients in 15 minutes!

Ingredients:

  • 6 cups chicken broth
  • 4 cups cooked shredded chicken (*or see slow cooker method below, which uses uncooked chicken breasts)
  • 2 (15-oz) cans Great Northern beans, drained
  • 2 cups salsa verde
  • 2 tsp. ground cumin
  • optional toppings: diced avocado, chopped fresh cilantro, shredded cheese, chopped green onions, sour cream, crumbled tortilla chips

Directions:

Stovetop Method: Add chicken broth, shredded chicken, beans, salsa and cumin to a medium saucepan, and stir to combine.  Heat over medium-high heat until boiling, then cover and reduce heat to medium-low and simmer for at least 5 minutes.
Serve warm with desired toppings.
Slow Cooker Method: Add chicken broth, 2 (uncooked) *boneless skinless chicken breasts, beans, salsa and cumin to a slow cooker, and stir to combine.  Cook on low for 6-8 hours, or high for 3-4 hours until the chicken is cooked through and shreds easily with a fork.  Shred the chicken.
Serve warm with desired toppings.

Tell us about your life before you started the program. How did you feel about yourself and your body?

Before I started Beachbody programs I was in an awful place mentally. At my worst, I got up to a very soft 221 pounds. After this, I did some things to take some of the weight off, but I never stuck to anything, so changes were made but I would always slip back to gaining weight again and losing more and more muscle. When things truly changed for the worst though, was a few years back. I had two near death experiences due to exposure to peanuts and all of a sudden I developed severe anxiety. At the time, I didn’t know that it was anxiety – I felt like I was dying every single day. I worried all the time for my health – checking my pulse throughout the day. I went to the ER on multiple occasions thinking I was having a stroke and/or a heart attack. I once convinced myself that I had MS due to a constant tingling in the back of my head. It got to the point where it felt unbearable – and I KNEW something had to change.

What inspired you to change your life and begin your transformation journey?

I realized that I had developed an anxiety disorder. I researched ways to reduce anxiety without going on medication, but kept coming back to the same two things, changing your diet and exercise. As a result, I decided to go back to P90x- it had worked in the past for me, so why not try it again? At first it was tough, I was worried about my heart rate and got anxiety from doing the workouts. But I pushed through. I started to get better physically each day. As my physical health improved, I noticed my mental health changing too. Fast forward – I completed P90x twice, then INSANITY, then P90x2 … As of this past June, I decided to go full tilt on this. My anxiety had gone down, but maybe if I went 100% into the diet, it would nearly disappear? So I moved onto p90x3, got AWESOME results – so awesome that I actually became a Beachbody Coach! Now, after Body Beast, I am in the best shape of my life! I have abs for the first time in my life! I have never felt better physically OR mentally!

What is the greatest challenge you faced before beginning the program? How did the program and Beachbody® help you overcome that challenge?

My greatest challenge was always MYSELF. I had developed such bad anxiety that I was afraid of starting something too demanding. When I did start working out, I would sabotage myself by not eating right. Mentally, I was holding myself back due to fear and angst. Finally, the light went off after seeing a Beachbody infomercial for P90x. I dusted off my DVDs and Pushed Play. I had to mentally change who I was and what I believed, in order to complete these programs. It was not easy, but once I made these changes and COMMITTED, EVERYTHING in my life began to change for the better. I am an all around better person mind, body, and soul from these programs. I owe my life to them!!

What in particular did you like about the program you chose?

Body Beast was absolutely incredible. It was a challenge every single day, and I loved it. Sagi is a phenomenal trainer; he keeps you motivated and keeps pushing you to go further. I never thought I would love a program more than p90x, but then I found p90x3. Then I never thought I would love a program more than that, until I began Body Beast. The eating plan was HUGE in my success, and although a lot of prep was involved, it was so easy to follow. It changed everything I thought I knew about diet, weight training, and supplementation. The results speak for themselves, this is my SOULMATE program!!

Describe the results you achieved with your Beachbody program. Which achievements are you proud of?

Throughout the course of this journey, I have gone from 221 pounds, to a rock solid 180 pounds! I have added inches of muscle to my arms, shoulders, legs and chest, while dropping from a 38 waist size to a 32! Finally, I dropped from 25% body fat to a mere 11.6%! Physically, I am most proud of my abs, the compliments from others have been incredible. I cannot wait to walk around the beach this summer with this newfound confidence in my body! Even more than the physical changes, I am most proud of the changes these programs have caused for me mentally. This newfound confidence is something I never thought I would have. I never thought I could have a body like this. I am the strongest MENTALLY that I have ever been in my entire life. My entire outlook on myself has transformed, to go along with my physical transformation. Most importantly, being able to make these changes has shown me that NOTHING is impossible. If I can make these changes, ANYONE can! I CAN’T WAIT for my NEXT challenge!

How has your life changed since completing your Beachbody program?

Words cannot describe accurately how much Beachbody has changed my life. Through the completion of these programs, my battle with Generalized Anxiety Disorder has been won! 3+ years ago, I never thought I would be able to overcome this disease. It was crippling me and those I loved. However, I was determined to solve the problem without the use of medication. I did not want to be dependent on meds for the rest of my life at only 25 years old. Beachbody was the answer. These programs were my cure. I am now stronger physically, mentally, and emotionally. I have a confidence that I have NEVER had in my entire life. Now going on 30, I am in the best shape of my life and getting more fit by the day!!! These programs changed me so much that I am now a coach helping OTHERS to undergo life changes, motivating them to complete these programs and to improve their overall health and fitness. I have never been happier in my entire life.

How did participating in a Challenge Group help you reach your goals? How did your group support you and keep you accountable?

Participating in Challenge Groups have been HUGE in my success. My first Challenge Group experience was with p90x3. It really gave me the support system and structure to ensure that I finished the program ON TIME in 90 days and to make sure I pushed play every single day (even when I maybe was not feeling up to it!). They were huge for accountability and general success tips. The Challenge Group for Body Beast, specifically the Swoll Squad Man Cave was even MORE helpful. I was surrounded by over 50 guys, all looking to achieve the same goals, all using the same program to do this. We shared tips and tricks. We discussed supplementation. We discussed added workout ideas. It was absolutely instrumental in helping me to achieve these results.

Watch me make Quinoa!

Superfood: Quinoa

Often referred to as the supergrain, quinoa (KEEN-wah) is high in fiber and high-quality protein. In fact, it contains more protein than any other grain while also packing in iron and potassium. One half cup of quinoa has 14 grams of protein and 6 grams of fiber. This superfood is classified as a whole grain and is naturally gluten-free. Quinoa is a tiny grain that cooks up like rice and has a mild, nutty flavor and a light, fluffy texture similar to couscous. You can find it next to other grains in health-food stores and your supermarket.
It is VERY easy to make. You can add it to salads, meat, or eat by itself.  KIDS LOVE IT TOO!

Here is a quick Quinoa recipe to try!


Quinoa Salad with Sugar Snap Peas

  • ACTIVE: 15 MIN
  • TOTAL TIME: 40 MIN
  • SERVINGS: 6

  1. 1/2 pound sugar snap peas
  2. 1 1/2 cups quinoa, rinsed and drained
  3. 1/4 cup plus 1 tablespoon extra-virgin olive oil
  4. 3 tablespoons white wine vinegar
  5. Salt and freshly ground pepper
  6. 1/2 cup salted roasted pumpkin seeds
  7. 1/2 cup minced chives
  1. In a small saucepan of boiling salted water, simmer the peas until bright green and crisp-tender, about 1 minute. Drain and spread out on a large plate to cool, then pat dry. Cut the peas on the diagonal into 1-inch pieces.
  2. In a small saucepan, combine the quinoa with 2 cups of water and bring to a boil. Cover and cook over low heat until all of the water has evaporated and the quinoa is tender, about 15 minutes. Uncover and fluff the quinoa, then transfer to a large bowl and let cool to room temperature.
  3. In a bowl, combine the oil and vinegar and season with salt and pepper. Add the peas to the quinoa with the pumpkin seeds, chives and dressing; stir. Season with salt and pepper and serve at room temperature or lightly chilled.

Quinoa Stuffing

This simple stuffing is loaded with sweet apples and cranberries and topped with pine nuts. It tastes great warm or cold.







Total Time: 42 min.
Prep Time: 10 min.
Cooking Time: 27 min.
Yield: 16 servings, ⅔ cup each

Ingredients:
2 Tbsp. olive oil
1 medium onion, chopped
2 cloves garlic, finely chopped
8 medium celery stalks, chopped (about 4 cups)
2 medium green apples, with peel (about 2 cups)
4 cups low-sodium organic vegetable broth
2 cups dry quinoa, rinsed
1 tsp. sea salt
1 tsp. ground cumin
½ tsp. ground black pepper
½ cup dried cranberries
½ cup chopped fresh cilantro
½ cup pine nuts

Preparation:
1.Heat oil in medium saucepan over medium-high heat.
2. Add onion and garlic; cook, stirring occasionally, for 2 minutes, or until fragrant.
3. Add celery and apple; cook, stirring frequently, for 8 to 10 minutes, or until tender.
4. Add broth, quinoa, salt, cumin, and pepper. Bring to a boil. Reduce heat to medium-low; cook, covered, for 15 minutes, or until most of liquid is absorbed. Remove from heat.
5. Add cranberries. Cover and let stand for 5 minutes.
6. Add cilantro and pine nuts; fluff with fork and serve.

Science Proves Gluten Sensitivity Isn’t Real, People Are Just Whiners

That may be a snarky way of saying it, but it’s true in some cases. Scientific studies have concluded that sensitivity to gluten for people who do not have Celiac disease may be completely psychological.
It is especially relevant in a country where 17 million people may unnecessarily believe that they are gluten-sensitive. (Source: A Mayo Clinic survey in 2012, cited in a NY Times article.)
It is especially shocking in a planet that spent $10.5 billion last year on gluten-free products. (Source: Mintel, a market research company, cited in the NY Times article.)
It is especially important because a psychological disease can spread as fast as any virus but be more enduring.
It is especially lucrative for all the food companies making tons of money off of people like you.

The same scientist who gave strong proof for gluten sensitivity in 2011 now says that it might only be in your head.

Let’s start with some facts to guide you through this topic. Gluten is a protein found in grains. Celiac disease is very real. Gluten triggers really bad symptoms in people with Celiac disease. These symptoms include “depression, ADHD-like behavior, abdominal pain, bloating, diarrhea, constipation, headaches, bone or joint pain, and chronic fatigue” (Source: Celiac Disease Foundation).
That is not a pretty list, and it’s hard not to feel sympathy for those who suffer from these symptoms. Gluten sensitivity is not something you would think millions of people worldwide would be giving themselves, but they might very well be.
There is a term for people who get these gluten-triggered symptoms but who do not have Celiac. The term is non-Celiac gluten sensitivity (NCGS) or gluten sensitivity for short. This disease is largely self-diagnosed, and studies are starting to show that it may be real in a great number of cases. Professor and scientist Peter Gibson is no stranger when it comes to studying gluten. He did a study in 2011 that gave a lot of credit to the belief in (non-Celiac) gluten sensitivity. Seeing that NCGS had become a worldwide phenomenon, he revisited the topic in 2013 with a critical look at the original assumptions. These are the measures he took to validate his results:
  • Subjects were given every single meal for the duration of the study.
  • Any other potential causes of bad stomach symptoms were removed from the diet. (Think lactose from milk.)
  • Just in case you do not think he was serious, Peter collected nine days worth of urine and fecal matter. (Now that’s a topic of conversation.)

The results were pretty shocking. They concluded that gluten in no way could have caused any of the negative symptoms that the subjects were suffering from.
NOCEBO might sound like the name of the latest trendy NYC neighborhood, but it’s not. It is a term used to denote something perceived as HARMLESS, but actually has harmful effects to people who take it. Gluten was proven as a NOCEBO by the researchers of this medical study. People, who did not take gluten but had thought they were, began to experience a list of symptoms that no one would not want to wish on his or her enemies. In the study’s own terms, “We found no evidence of specific or dose-dependent effects of gluten in patients with NCGS” (Source: No effects of gluten in patients with self-reported non-Celiac gluten sensitivity.). Gibson then had to take the research one step further.
He began to study people who had self-diagnosed their gluten sensitivity. In other words, these were the people who believed they were gluten-sensitive and suffered from symptoms. The researchers “failed to confirm [that] patients with self-perceived NCGS have specific gluten sensitivity.“ (Source: a study titled Is gluten a cause of gastrointestinal symptoms in people without Celiac disease?) The exaggeration of these results is not necessary.
On the back of this, Gibson’s team became less interested in studying gluten itself and more interested in studying people who believed they were gluten-sensitive. He wanted to better understand adults who diagnosed themselves with gluten sensitivity. According to their results, “GFD was self-initiated in 44% of respondents; in other respondents it was prescribed by alternative health professionals (21%), dietitians (19%), and general practitioners (16%).” If you have a friend with “gluten sensitivity,” there is a 44% chance they self-diagnosed. There is only a 16% chance that a gluten-free diet was recommended by a medical doctor.
Jessica Biesiekierski, a member of Gibson’s team, is focused on doing more experiments to prove whether or not non-Celiac gluten sensitivity truly exists. Gibson and Biesiekierski’s have said:
“Non-Celiac gluten sensitivity (NCGS), occurring in patients without Celiac disease yet whose gastrointestinal symptoms improve on a gluten-free diet (GFD), is largely a self-reported diagnosis and would appear to be very common.”
“There is definitely something going on,” Biesiekierski told RCS, “but true NCGS may only affect a very small number of people and may affect more extraintestinal symptoms than first thought. This will only be confirmed with an understanding of its mechanism.”

What's for dinner?










Total Time: 25 minutes
Prep Time: 5 min.
Cooking Time: 20 min.
Yield: 2 servings

Ingredients:
2 (4-oz.) raw wild salmon fillets
Sea salt and ground black pepper (to taste; optional)
2 cups fresh baby spinach, coarsely chopped
1 Tbsp. chopped, dry-pack sun-dried tomatoes
¼ cup chopped raw almonds
Nonstick cooking spray


Preparation:
1. Heat oven to 350° F.
2. Cut a slit lengthwise ¾ of the way through each salmon fillet, making sure not to cut all the way through. Season with salt and pepper if desired. Set aside.
3. Combine spinach, tomatoes, and almonds in a medium bowl; mix well. Spoon ½ of the mixture into each slit.
4. Arrange fillets on baking pan lightly coated with spray.
5. Bake for 15 to 20 minutes, or until salmon flakes easily when tested with a fork and the spinach mixture is heated through.

Before I started the 3 day refresh  I was struggling with feeling good physically. Genetically I suffer from constipation. I've never been regular and the more food I would eat the more sick I felt. I really just wanted something to help clear out my system.



1. Tell us about your life before you started the program. How did you feel about yourself and your body?

 My life seems crazy on a daily basis. Between my boyfriend and I we have 5 kids. I dont have much time to myself and when I do have time to myself its spent cleaning and doing all the household chores a stay at home mom has. I also have fibromyalgia which makes some days very difficult for me, mentally and physically. Before I started the 3 day refresh program I felt horrible about myself and my body. Genetically I suffer from constipation. I've never been regular. I don't eat a lot but the more food I would eat the more sick I felt. Ive really just been hoping to find something that would clear me out without all the cramping and running to the bathroom all day. I just wanted to feel better. 

2. What inspired you to change your life and begin your transformation journey?

 There are a few factors that inspired me to begin this transformation. That feeling I have everyday when my clothes don't fit and I don't like what I see when I look in the mirror. My sister in law who has mad motivation, runs marathons, works out in her "pain yard" everyday, sometimes twice a day. I wish I had her energy, motivation and mental strength. My great friend Rachael (beach body coach) inspires me because not only is she a mother of 3, she also makes time for herself while helping others reach their goals to become healthy and lose unwanted weight. I really just want to be able to take the time to improve myself so that I feel better, mentally and physically.
 
3. What is the greatest challenge you faced before beginning the program? How did the program and your Coach help you overcome that challenge.

 The greatest challenge I faced before starting this program is always talking myself out of exercise and making excuses of why I need to change my eating habits. Although my eating habits are not horrible, I do need some discipline on portions and sometimes the simple pleasures in life (desserts). I just simply cant eat the things I used to without gaining weight. Lastly, I tell myself because my man loves me the way I am, I don't need to make any changes. While my coach is a whole other state away from me I find it very difficult to follow through with things. I don't have that "physical" person there pushing me. I finally pushed through and finished the program. That was all due to me....pushing myself towards what I wanted.


 4. What in particular did you like about the program you chose?

  What I liked about the program I chose was that it was only for 3 days. That is what I kept telling myself "its only for 3 days, you can do this"


 5. Describe the results you achieved with your Beachbody program. Which achievements are you proud of?


 Within the 2nd day of the program I lost almost 5 pounds.....I didn't like that I felt hungry but I loved the feeling of not having that bloated tight uncomfortable feeling that I live with on a daily basis. #6 Since the program Ive learned what my body can tolerate as far as certain foods. There are now foods that I wont eat a lot of, like breads and pasta, and sugars. Im still looking for that mental strength and motivation to make time for myself to get the exercise I need to get back to the weight where I feel good about myself. The 3 Day Refresh gave me the jump start that I needed.  I am ready to continue this good feeling. I highly recommend it!
